This elegant Cabernet Sauvignon is enhanced by the addition of 10% Sangiovese and 10% Cardinal Gold (34% Cabernet Sauvignon, 33% Merlot, 33% Sangiovese). It is bold yet subtle, displaying characteristics of cherry, blackberry, anise and coco that fill your mouth and result in an elegant and supple finish.

This soft and subtle wine was its own creation. We harvested our three red varietals at almost the same time, making it possible to create a “blend at fermentation” of Cabernet Sauvignon (34%) Merlot (33%) and Sangiovese (33%)
This vibrant blend fills your mouth with ripe red fruits like bing cherries and freshly picked raspberries. As the wine developes in your mouth, layers of toasted almond, earth and soft spices reveal themselves.

Food Pairing: cheeses, pork loin roast, roasted chicken and turkey, baked salmon.

The 2005 Sa Va is 100% Merlot, made in the French tradition. This seductive wine is filled with layers of black cherry, roasted coffee and sage. Red currant carries over from the nose to the palate and the backbone of the wine is framed by focused, integrated tannins, finishing with depth and rich fruit.

Cameo

Our delicate Cameo is Vernaccia, a grape not yet recognized in the US. Vernaccia is a Tuscan grape associated with the area of San Gimignano. Cameo is crisp and clean, soft and refreshing with a hint of grapefruit and the subtle aroma of orange blossoms. 

Food Pairing: rich cheeses and cream sauces, shell fish, white fish, and fruits such as mango, papaya and avocado.
